Jim and Marilyn Bero show you a quick and easy recipe for a pizza that includes potatoes, ricotta, and tomatoes. Also, a light lemon linguine dish and who is eating ears?
10 MINUTE PIZZA
with ricotta, potato, onion and sliced fresh plum tomato
Heat: on medium, a large saute pan drizzled with olive oil
Spread: ricotta on the top of a pre-baked thin crust pizza ( recommend Baboli)
Place: ricotta covered pizza in saute pan
Add: thin sliced Idaho potatoes that you have blanched in salted water for 2 minutes,drained and patted dry
Add; a mixture of olive oil,salt, pepper and garlic powder to the potatoes
Top: with thin slices of plum tomato and thin slices of red onion
Sprinkle: with oregano, salt and pepper, grated pecorino
Drizzle: with olive oil, broil until it starts to brown, 5 to 6 minutes and serve
LINGUINE WITH LEMON
Zest 2 lemons and squeeze out the juice, set aside
Cut the skin and pith of 2 more lemons,
Slice out the flesh between membranes
Place in a bowl, sprinkle with fresh ground pepper and set aside
Cook 1 pound of linguine (al dente)
Reserve 1/2 cup of pasta water
In a large saute pan, heat 6 tablespoons of olive oil and 4 tablespoons of unsalted butter
Add reserved lemon zest and juice
Add pasts and 1/2 cup of pasta water
Stir in lemon sections, 1/2 cup grated parmesan and serve
Sprinkling more cheese over the pasta

VERMICELLI WITH MUSHROOMS AND GORGONZOLA
Heat in a large saute pan…
1 tablespoon unsalted butter,
1/4 cup sliced mushrooms
2 teaspoons of chopped onions
1 tablespoon chopped parsley
Cook over medium heat for 5 minutes
Add; 1 cup of cream
1 tablespoon gorgonzola cheese
Stir in 4 ounces of cooked vermicelli pasta and 1/4 cup of the salted pasta water
Top with a drizzle of olive oil and serve
ORRICHETTI NORCINA
EARS WITH SAUSAGE
Mix; 1 pound ground pork, 1/2 teaspoon each of salt and fresh ground pepper, 1/4 teaspoon baking soda, 1/4 teaspoon garlic powder, 1/4 teaspoon dry rosemary, 1/4 grated nutmeg
Let set 10 minutes, make into patties
Saute in olive oil , 2 minutes per side, cut into chunks, set aside
Chop 1 pound cremini mushrooms, saute in oil, cook for 5 minutes
Add 1/2 cup white wine, 1/2 cup of cream, add sausage chunks
Add 1 pound of cooked to al dente, orrichetti , 1/2 pasta water
Add 1/2 cup grated pecorino, juice of 1 lemon, 1/2 cup parsley
Stir and serve
