Spaghetti Frittata & Comfort Food .:. Episode 19

PASTA FRITTATA

Mix: 3 eggs,1/2 cup ricotta, 1/2 cup parmesan
Add; 2 cups left over pasta in sauce
Add: 1/2 cup of toasted bread cubes or Panko
Heat a 10 inch saute pan, coat with a thin coating of olive oil

Add; pasta mixture, flatten out, shake pan. When mixture has thickened use spatula to loosen bottom of Frittata. place in broiler to brown top, slide into serving plate,drizzle with oil oil, garnish with parsley

COMFORT FOOD

American Mac and Cheese
serves 4 to 6

8 ounces elbow pasta, boil till al-dente in salted boiling water. reserve 1 cup pasta water, drain and reserve

Heat : 1 tablespoon of butter, whisk in 1 tablespoon of flour, 1 teaspoon of mustard powder, pinch of cayenne pepper, cook 1 minute
Add: one 12 ounce can of evaporated milk and whisk for 5 minutes
Add :11/2 cup of grated cheddar cheese, 1/4 diced velveeta cheese, stir till thickens, season with salt and pepper
Add pasta and reserved pasta water, stir, add salt and pepper and serve

BAKED MASH POTATOES

2 baking potatoes with skins, wash, dry, rub with canola oil
Microwave for 5 minutes, turn over, microwave for 5 minutes, let cool
Slice into chunks
Place in a mixing bowl, add salt and pepper
Warm chicken stock, unsalted butter
Use a emulsifier to mash and whip
You can top with greek yogurt, chives, feta if you wish

RIBOLETTA
twice cooked soup

In a food processor . Puree 2 cups of cannelini beans, 2 cloves of garlic, 1 onion, 1 carrot, 1 teaspoon of dry sage
Add salt and pepper to taste

Heat: in a large pot, 1 14 ounce can of diced tomatoes, 1/2 head sliced savoy cabbage, cook for cook over medium heat for 5 minutes
Add; 2 cups of chopped spinach, 2 cups escarole,,4 cups of chicken stock,2 cups diced potatoes
Add puree mixture, simmer 1 hour, let cool
In a large baking dish coated with olive oil add layer of 1/2 inch pieces of day old Italian bread
Top with a pesto sauce, cover with soup mixture
Top with grated parmesan., repeat layers
Drizzle top with olive oil
Bake at 350 degrees for 1 hour
